The Chablis region is the northernmost wine district of the Burgundy region in France. The cool climate of this region produces wines with more acidity and flavors less fruity than Chardonnay wines grown in warmer climates. It is creamy, nutty and buttery like Brie, but with a grassy intensity at its centre and a more mushroomy aroma rising from its bloomy rind. The contrast of this style to the creamy nuttiness is more pleasing to me than the echo and amplification of these characteristics, that I taste when I pair Camembert with the oaked French Chardonnay. The more intense the cheese, the more intense these wine characteristics should be. Chablis is characterised by an appealing salinity and a general tartness. Overlaying fungal, creamy nuttiness on top of each other can feel almost cloying.
